INGREDIENTS:
100g firm tofu, cubed
1 tsp hoisin sauce
1 tsp sesame oil
5g sesame seeds
200g cauliflower, roughly chopped
20g peanut butter
100g courgette
1-calorie cooking spray
METHOD
Spray some 1-calorie cooking spray in a pan and lightly fry the tofu.
In a separate pot, fill with boiling water and boil the courgettes until soft.
In a pan, mix the peanut butter, sesame oil and hoisin sauce and heat for 2-3 minutes.
Blitz the cauliflower in a food processor until it makes a rice-like consistency.
Then, steam the cauliflower rice for 2-3 minutes or uncovered in the microwave for 3 minutes.
Assemble the cauliflower rice, courgette and tofu and top with the peanut hoisin sauce.
Sprinkle sesame seeds on top to serve.
